the roaster
Nick Adolphsen, Founder & Head Roaster
By day, Nick is a chemical engineer — precise, analytical, and endlessly curious. That same mindset naturally carried over into his love for coffee. Nick’s love for coffee began long before Alpha & Ωmega — what began as a fascination with flavor and process turned into hands-on experimentation. In 2023, he began roasting as a hobby, learning the craft one small batch at a time.
A husband and father to a son and daughter, Nick’s approach to coffee is shaped by faith, family, and purpose. Each roast reflects the same care and intentionality he brings to the people and moments that matter most.
For Nick, coffee isn’t just a drink — it’s a way to connect, to slow down, and to honor the beauty in simple beginnings and meaningful ends.
